Heat olive oil in a skillet at medium-high heat. Add garlic, zucchini, salt and pepper and saute until lightly browned and soft, about 5-7 minutes. Remove from heat and allow mixture to cool to room temperature.
In a food processor, blend zucchini mixture, yogurt, mint, & lemon zest. Add extra salt and pepper if needed.
Transfer dip mixture to serving bowl and garnish with extra mint and lemon zest if desired.
Enjoy with zucchini spears or sliced cucumber
