Zucchini + Apple Oat Muffins

These delicious muffins pack an extra hidden fruit and veggie punch.
INGREDIENTS
1 cup oat bran
1 cup oats
½ tsp baking powder
½ tsp baking soda
½ tsp cinnamon
½ tsp nutmeg
¼ tsp sea salt
2 eggs
2 tbsp coconut oil, liquified
1 cup unsweetened applesauce
1 large zucchini, grated
1 apple, grated
DIRECTIONS

Preheat oven to 400 degrees Fahrenheit.
Grease muffin tins well, or line with muffin cups.
Place steel cut oats in blender and process until you create a smooth oat flour.
Blend all dry ingredients in a medium bowl. In a large bowl, blend wet ingredients together. You can use a cheese grater or a food processor for your zucchini or apple. Slowly fold dry ingredients into wet ingredients, stirring until blended. Pour muffing mixture into muffin tins.
Bake for 15 minutes or until a knife comes out clean. Let muffins cool in pan for 1-3 minutes before moving them to a cooling rack to cool.
