Watermelon Gazpacho

This refreshing summer soup will become one that you crave on a hot summer day.

 4 cups seedless watermelon, cubed
 1 large english cucumber, peeled + cubed
 2 large tomatoes, peeled + cored
 1 large garlic clove
 1 tbsp red wine vinegar
 2 tbsp olive oil
 juice of 1 lime
 ¼ tsp sea salt
 ¼ tsp ground black pepper
 fresh mint for garnish



Peel tomatoes and cucumbers.  Tip: it may be easier to peel your tomatoes with a knife if your peeler is not sharp enough.

Place all ingredients in food processor or high power blender on high until fully blended.

Chill gazpacho in refrigerator until ready to serve. 

Garnish with mint and enjoy!

Rarely do I ever have super distinctive cravings for specific foods, but about a  week ago I had a craving that came on sudden and strong. Watermelon Gazpacho.
The funny thing is that while I have probably always been vaguely aware that the idea of blending watermelon and other refreshing summer vegetables into a cold soup had to be amazing, I am actually not quite sure if I had ever actually had watermelon gazpacho before in my life.
I just KNEW that it had to be amazing, though, and since I figured that Watermelon Gazpacho was probably a healthier food craving to have than most, I allowed myself to indulge the obsession.
…And the fact that the heat and humidity in Philly were beyond comprehensible for this California girl last week only further cemented my commitment to the cause.

After many days of thinking about it,  I knew there was nothing else to do but actually get in the kitchen and bring a watermelon gazpacho recipe to life for you.  I mean, for me…but also for you.

So, after lugging a very heavy watermelon for a very sweaty five blocks from Philly’s Open Air Italian Market back to my house, I began experimenting.

The results? Confirmation that Watermelon Gazpacho is indeed the best. idea. ever.
