Peel tomatoes and cucumbers. Tip: it may be easier to peel your tomatoes with a knife if your peeler is not sharp enough.
Place all ingredients in food processor or high power blender on high until fully blended.
Chill gazpacho in refrigerator until ready to serve.
Garnish with mint and enjoy!
After many days of thinking about it, I knew there was nothing else to do but actually get in the kitchen and bring a watermelon gazpacho recipe to life for you. I mean, for me…but also for you.
So, after lugging a very heavy watermelon for a very sweaty five blocks from Philly’s Open Air Italian Market back to my house, I began experimenting.
