This delicious salad makes a great side dish or can be added to your meal prep rotation by adding a can of tuna to make two delicious entree-sized salads that keep well in the fridge.
De-rib and thinly slice kale and place in a large serving bowl. Massage kale well. Set aside at room temperature.
Heat the oil in a small saucepan over medium-low heat. Add the onion, garlic, and jalapeno and cook for 5 minutes, or until very soft.
Add the vinegar and cook for 1-2 minutes.
While still hot, pour the mixture over the kale and toss well. Season with salt and black pepper.
Serve as a side salad (makes 4 servings) or add 1 can of tuna and mix into salad to make 2 entree-sized salads.
