Start the morning with this southwestern-inspired scramble.
Heat coconut oil over medium heat in a non-stick pan. Add diced bell pepper and onion to pan and cook until soft 5-7 minutes. Add tomatoes and cook for 1-2 minutes. Add cilantro and eggs and scramble them well with veggie mixture. Continue to scramble for 1-2 minutes until eggs are fully cooked. Top with guacamole & extra cilantro.
