Cook quinoa: Rinse quinoa. Place quinoa and 1 1/2 cups of water (use a 1:2 ratio of quinoa to water for cooking) in a medium pot. Bring quinoa to a boil and then reduce heat to medium-low and cover.
Cook for 15-20 minutes without stirring until you can fluff the quinoa with a fork. Set quinoa aside.
Prepare fajitas: Mix 1 Tbsp of olive oil and 2 tsp taco seasoning in a medium bowl. Mix in shrimp and coat thoroughly.
Heat a large saucepan or grill pan with 1 tbsp of olive oil to medium heat. Add chopped bell pepper and onion and saute for 3-4 minutes until soft. Add shrimp mixture to the pan. Cook until shrimp is pink and opaque. Drizzle extra seasoning and oil into pan to coat peppers and onions.
Wrap shrimp fajita mixture with 1/2 cup quinoa, chopped cilantro, and your favorite salsa in a collard green leaf burrito-style and enjoy!
