Pumpkin Turkey Chili

Celebrate fall with this easy pumpkin chili recipe.
INGREDIENTS
1 tbsp olive oil
1 yellow onion, diced
1 green bell pepper, diced
1 orange bell pepper, diced
1 zucchini, diced
2 jalapeño peppers, deseeded and chopped
2 cloves garlic
1 lb turkey or grassfed beef
15 oz diced tomatoes, with liquids
15 oz pumpkin puree
1 cup water
1 tbsp chili powder
1 tsp ground cumin
½ tsp salt
ground black pepper, to taste
DIRECTIONS

In a large pot, heat oil over medium heat. Add onion, bell peppers, zucchini, jalapeños, and garlic. Cook for about 5 -7 minutes, stirring regularly. Add turkey or beef and cook until brown. Add tomatoes, pumpkin, water, chili powder, cumin, salt and pepper. Bring to a boil. Reduce heat to medium low, cover and simmer, stirring
occasionally, for 30 minutes more. Ladle chili into bowls and serve.
