One Pan Italian Sausage + Veggie Bake

This one-pan sausage and veggie bake is perfect for a busy weeknight dinner.
INGREDIENTS
4 tbsp olive oil
1 large carrot, chopped
1 medium red potato, chopped
1 medium zucchini, chopped
1 red bell pepper, chopped
1 small head broccoli, chopped
½ medium yellow onion, chopped
4 Italian chicken sausages (like True Story or Aidelle's brands)
1 tsp dried basil
1 tsp dried oregano
1 tsp dried parsley
1 tsp garlic powder
½ tsp onion powder
½ tsp sea salt
½ tsp ground black pepper
⅛ tsp red pepper flakes
parmesan cheese, freshly grated to garnish
fresh parsley, to garnish
DIRECTIONS

Preheat oven to 400 degrees. Spray large baking sheet with nonstick cooking spray or parchment paper. Chop vegetables to approximately the same size so they cook evenly. Slice sausages into thick coins.
Add all veggies to a large bowl. In a small bowl, mix together seasonings and olive oil and pour over vegetable mixture, tossing to coat thoroughly. Add sausages to bowl, toss one more time and spread mixture out onto baking sheet.
Bake for 20 minutes, toss veggies, and then bake for another 20 minutes. Garnish with freshly grated parmesan and parsley and serve.
