Lemon + Oregano Salmon with Roasted Asparagus

Fresh oregano makes this salmon recipe one of my all-time favorites
INGREDIENTS
1 lb salmon fillet
1 bunch of asparagus, 12-16 Stalks
1 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
3 tbsp fresh oregano, chopped
2 tsp dijon mustard
3 large garlic cloves, minced
extra oregano for garnish
sea salt + ground black pepper to taste
DIRECTIONS

Preheat the oven to 400 degrees Fahrenheit.
Lightly coat a large baking dish in olive oil. Place the salmon fillet(s) skin side down. Arrange asparagus spears around salmon.
In a small mixing bowl, mix together olive oil, lemon juice, oregano, mustard, and garlic together. Drizzle marinade over salmon and asparagus to coat. Sprinkle with salt and pepper if desired.
Place salmon in the oven and bake for about 10-15 minutes, or until salmon is cooked all the way through - time may vary depending on the thickness of your salmon fillets.
Serve a 3 ounce portion onto each plate with asparagus, garnish with fresh oregano, and enjoy!
