Jen’s Signature Morning Scramble

After years of experimenting with different morning routines over the years, I have to say that nothing has helped support my overall blood sugar, post-workout fuel needs, and weight management better than what has now become my “signature” morning scramble.
INGREDIENTS
1 tsp coconut oil
1 tbsp water
1 large zucchini, chopped
4 Baby Bella mushrooms, chopped
½ cup roasted sweet potato*
3 cups spinach
2 eggs, whisked
DIRECTIONS

Heat coconut oil in pan on medium heat. Add water, zucchini, mushrooms and cook until tender. Add extra water if pan gets dry. Add sweet potatoes and spinach and cook until spinach is completely wilted. Drain any excess water left in pan. Add whisked egg mixture and stir until cooked through. Plate and enjoy!

NOTES
*Roasted Sweet Potatoes: Over the weekend, I like to roast a large pan of sweet potatoes and keep them in a Tupperware to add to my scrambles or other meals throughout the week. It’s a great way to incorporate a delicious, nutritious, and unprocessed starch option into your routine!
