Use a box grater to grate carrot, zucchini, beets, onion into a bowl. Wrap grated veggies in a paper towel and squeeze and blot out extra moisture. Add garlic, salt, and pepper.
Add beef to bowl and mix to combine vegetable mixture and meat. Form burgers into 6 burgers.
Heat grill pan to medium-high heat and lightly spray with oil. Grill burgers for approximately 7-10 minutes and flip.
