Grilled fruit make a delicious summer treat topped with this delicious no-sugar-added coconut cream.
For Fruit: Prepare fruit and spray with nonstick cooking spray. Heat grill. Grill pineapple on high heat for 15 minutes, flipping halfway through. Grill peaches on medium heat for 7-10 minutes cut side down.
For Coconut Cream: Take coconut milk out of the fridge, making sure to hold container upright. Skim cream off of the top half of the can with a spoon (there will be coconut water on the bottom, discard or save for smoothies). Place coconut cream and vanilla extract in mixer or food processor and blend for 1 minute.
Serve coconut cream on top of grilled fruit.
