Farro Salad with Artichokes, Sundried Tomatoes, + Spinach with Chicken

This delicious grain salad is full of flavor and a complete balanced meal.

INGREDIENTS

 1 cup farro
 2 cups water
 8 oz chicken breast, cubed
 ½ cup sundried tomatoes in oil, roughly chopped
 14 oz can of artichoke hears, quartered, drained, rinsed and roughly chopped
 ¼ cup red wine vinegar
 2 cups baby spinach
 2 tbsp olive oil
 ½ cup fresh herbs (basil, oregano, and/or parsley), roughly chopped
  tsp dried oregano
  tsp dried basil
  tsp dried dill
  tsp onion powder
  tsp garlic powder
 salt + pepper to taste

DIRECTIONS

In a pot, combine farro and water and salt to taste and bring to a boil.  Once water is boiling, reduce to a simmer and cook for 18-20 minutes.

In a large serving bowl, combine sundried tomatoes, artichokes, spinach, red wine vinegar, olive oil, herbs, and seasonings.  

Heat a frying pant over medium heat, and spray with oil. Add cubed chicken and season with salt and pepper.  Cook chicken undisturbed for about two minutes, and then flip over with tongs and cook for another 2 minutes or until chicken is cooked and opaque.

Add hot chicken and farro into serving bowl with the other ingredients and mix well to help wilt the spinach. 

Serve and enjoy!
