Easy Veggie + Sausage Egg Bake

This make-ahead casserole is a great way to start your morning with a protein-packed breakfast.

 1 tbsp olive oil
 1 medium yellow onion, diced
 2 red bell peppers, diced
 2 cups mushrooms, roughly chopped
 4 cups spinach
 4 large chicken + apple sausages (like Aidelle's brand), diced
 12 eggs
 ½ tsp garlic powder
 salt + pepper

Preheat oven to 350 degrees.  Grease a 9x13 pan with nonstick cooking spray.

In a skillet, heat olive oil over medium-high heat and sautee onion and bell peppers until soft. Season with salt, pepper, and garlic powder.  Add mushrooms and sautee until soft, add chopped chicken apple sausage, add spinach until wilted.

Spread vegetable and sausage mixture evenly in bottom of baking pan.

In a medium bowl, whisk together eggs and a pinch of salt and pepper.. Pour egg mixture over vegetable and sausage mixture.

Place the baking dish in the oven and cook for about 35 minutes until the edges of the egg begin to brown and the egg bake is firm throughout.
