Easy Fish Tacos

These delicious fish tacos are so quick and easy to make and make for a perfect healthy weeknight dinner.
INGREDIENTS
olive oil cooking spray
¾ lb Mahi Mahi or other white fish
2 tsp taco seasoning
2 cups green or red cabbage, shredded
juice of 1-2 limes
½ tsp sea salt
4 tbsp fresh cilantro, chopped
8 8 (7-inch) corn tortillas or La Tortilla Factory Low-Carb Tortillas
Optional Toppings
0% Greek yogurt (or Lime Crema recipe)
salsa
lime wedges
shredded cotija cheese
DIRECTIONS

In a bowl, mix together cabbage, lime, sea salt, and cilantro.
Lightly spray grill with nonstick spray. Sprinkle both sides of fish with the taco seasonings. Grill over medium high heat until fish flakes with a fork about 3-4 min on each side. Flake fish into pieces and keep warm.
Wrap tortillas in paper towels and microwave for 20 seconds on HIGH or until warm.
Spread 3oz of fish and cabbage mixture onto each tortilla.
Top with the Greek yogurt, cotija cheese, salsa, and lime wedges!
