Cucumber Rounds with Goat Cheese, Pistachio, Pomegranate + Basil

INGREDIENTS
2 large English cucumbers
4 oz goat cheese
½ cup pomegranate seeds
¼ cup pistachios, crushed
¼ cup fresh basil, thinly sliced
DIRECTIONS

Peel cucumber (if desired) and slice into ¼ - ½ inch rounds.
In a bowl, mix crushed pistachio, pomegranate seeds, and thinly sliced basil to mix. Be careful to not crush the pomegranate seeds.
On a clean cutting board, spread a dollop of goat cheese on each cucumber round. After the goat cheese is spread, add pomegranate seed/pistachios mixture. You may need to press topping into goat cheese to get it to stay put.
