This simple soup recipe is BIG on flavor and feels just like you are digging into a delicious stuffed pepper without the extra steps of making them!
Heat a large skillet over medium heat. Add olive oil and sauté diced onions and peppers until soft, about 7-9 minutes. Transfer to slow cooker.
Add ground turkey and cook. Add onion powder, garlic powder, basil, oregano, and salt and stir until well combined. Cook until turkey is no longer pink.
Transfer mixture to a 6 quart slow cooker and add tomato sauce, diced tomatoes, chicken broth, and brown rice.
Cover and cook on low for 5-6 hours.
