Crockpot Chicken Zoodle Soup

The perfect veggie packed, low-carb alternative to your classic chicken noodle soup.
INGREDIENTS
8 cups low-sodium chicken broth
1 cup celery, sliced
1 cup carrot, sliced
1 large onion, diced
2 garlic cloves, minced
2 bay leaves
1 tsp thyme
½ tsp ground pepper
12 oz chicken breast
4 zucchinis, spiralized
DIRECTIONS

In a 4 1/2 - 6 quart slow cooker, combine broth, carrots, celery, onion, garlic, chicken, bay leaves, thyme, salt, + pepper. Make sure chicken is fully covered by liquid
Cover and cook on low for 8-10 hours or on high for 4-5 hours.
Pull out chicken and place on cutting board + shred. Discard bay leaves. Add shredded chicken and zucchini "zoodles" to slowcooker and cover with lid.
Cook on high for 20 minutes. Serve!
