1 bag Enjoy Life Chocolate Chips
1 cup almond butter, no sugar added
 sea salt, to taste

Melt chocolate chips in the microwave. Measure out the almond butter. Line mini muffin pan with liners.

Put about 1 tsp of melted chocolate in the bottom of the liner so it just covers the bottom of the liner. Spoon a small amount of almond butter on top of the chocolate layer. Cover almond butter with chocolate. Sprinkle with sea salt. Put cups in the freezer for about ½ hour to harden. Makes about 24 pieces.

Keep cups frozen for best texture and consistency.

Looking forward to trying this as a treat during my gestational diabetes. Would it work with Lily’s no sugar added dark chocolate chips and cashew butter? Thanks!

Hi Laura! Absolutely! You could definitely make those swaps and still use this method! I really like the Lily’s no added sugar chocolate chips. 🙂 Wishing you the best of luck on your gestational diabetes journey!
