For Soup: Add all soup ingredients into a Vitamix or other high powered blender. (If you don't have a Vitamix, you may want to chop ingredients smaller to help your blender out!) Blend all ingredients until smooth. Place soup mixture in refrigerator to chill - you may want to chill for at least 1/2 hour before cooking shrimp or make ahead.
For Shrimp: Add olive oil to a skillet and add jalapeno pepper. After about 1 minute, add shrimp and cook until they turn pink. Add fresh cilantro and lime juice, salt and pepper to taste.
To Serve: Pour green soup into shallow bowl. Place shrimp on top with avocado and cilantro to garnish. Serve and enjoy!
