Chili Lime Chicken Bites

These delicious chicken bites are easy to meal prep in bulk and perfect to grab for a snack on-the-go or a on top of a salad for a meal.
INGREDIENTS
1 lb ground chicken breast
1 large zucchini, grated with peel on (squeeze out extra water with a paper towel)
2 green onions, finely sliced
2 tbsp cilantro, minced
1 fresh lime, juiced
½ tsp cumin
¼ tsp chipotle chili powder
¼ tsp chili powder
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp ground black pepper
¼ tsp sea salt
1 tbsp olive oil
DIRECTIONS

In a large bowl, mix together chicken, zucchini, green onions, cilantro, lime juice, and spices.
In a large skillet, heat olive oil over medium-high heat. With a scoop or large spoon, drop meat mixture into the pan and cook for about 2 minutes each side or until cooked through.
COUNTS AS
1 Bite = 1/2 Protein
NOTES
Serving Ideas: Serve with my favorite salsa-yogurt dip or guacamole or fresh avocado slice. If you’d like, these can be made into larger patties to make full-sized burgers.
