Preheat oven to 350 degrees. Spray an 8 x 8 inch baking pan or muffin tray with cooking spray.
In a large bowl, beat eggs and blend in mashed banana. Stir in almond milk, maple syrup, and almond extract.
In a medium bowl, combine oats, almonds, coconut baking powder, and salt.
Stir dry mixture into wet mixture and combine well.
Spread mixture into baking pan. Bake for 25 to 30 minutes or until light golden brown.
Allow bake to cool in baking dish for at least 5 minutes before serving.
Serving Tip: Top with Greek yogurt for an extra protein boost.
